- Prepare 1 of fish, cubed.
- Prepare 3 of Potatoes.
- You need 2 of carrots.
- Prepare 1 of onion.
- You need 1/2 of lemongrass.
- You need 1 bunch of chopped parsley.
- You need 1 bunch of chopped Rosemary.
- It's 1 bunch of chopped thyme.
- It's 2 of stock cubes.
- It's 4 of spring onions.
- It's 1 of plate of grated cheese.
- You need 1 block of of puff pastry, rolled to cover pie dish.
And that is, "if it swims, it slims". Normally, Fish Pie is made with butter and flour to make a roux and sometimes with added cream. However, I used my favourite blended oats and milk method to make a Syn Free roux. Scatter the grated root veg over the pie mixture.
Lemon Fish Pie step by step
- Preheat oven to 200° C..
- Boil some water and dissolve your stock cubes in 500ml..
- Place your chopped potato, carrot, onion, spring onion, lemongrass and garlic into a saucepan..
- Add olive oil, salt and pepper and soften..
- Add your cheese, stock, fish and herbs into the saucepan and bring to the boil. Add flour to thicken your sauce if needed..
- Pour your filling into the pie and cover it with the pastry..
- Bake your pie for 45 minutes to 1 hour or until golden brown..

We love fish pie , I used smoked haddock , trout and basa fish , I made a cheese sauce with the milk I poached the fish in and for the topping mashed potatoes sprinkled with grated cheese and crushed cheese and onion crisps this gives it a lovely crunchier topping , enough for our tea and one for freezing , yum yum remove from the heat and add the fish, corn, peas, capers, lemon juice, dill, parsley and salt and pepper. Mix well, then fold the egg quarters through very gently. Pour into a large casserole dish, top with the mashed potatoes, then sprinkle over the grated cheese. Traditionally the British Fish Pie is topped with mashed potato, or cheesy mashed potato if my mum was making it. I love it like that but I don't know about you, midweek when the kids have after school clubs and we need dinner quickly, the thought of making mashed potato doesn't appeal.
