Most snickerdoodle recipes just call for granulated sugar, but brown sugar helps to keep the cookies from spreading as much and it also adds some moisture to the cookie dough. My best snickerdoodle cookies recipe makes flat snickerdoodles that are soft yet chewy in the middle, with crispy and lightly puffed edges.
